Pulled “Pork” Jackfruit Sandwiches

In this edition of my favorite weekly ritual, Pantry Meal of the Week, I dug pretty deep into the depths of my fridge and pantry. I had some leftover cabbage and radish slices from the Classic Pozole Rojo we devoured the other night, so I immediately thought of coleslaw. Because that’s a totally normal train of thought. I found a few remaining cans of jackfruit in the pantry from back when I was stocking up to make BBQ “Chicken” Jackfruit Pizza the other week, and decided to take them out for a swing.

BBQ “Chicken” Jackfruit Pizza

In case you aren’t familiar with the amazingness of the jackfruit, let me introduce you to your new favorite meat substitute. Jackfruit is a giant spiny looking monster fruit that is native to Southeast Asia. It is eaten both during its young stage when it hasn’t developed a sweet taste yet as well as once it’s ripe and has a sticky sweet flavor. It is delicious both young and fully ripe, but for this recipe we don’t want it to be too sweet, so we’re going to use the young version.

One Pot Vegan Bolognese

This week when one of my best friends received her masters degree (woohoo!), I decided that I would be a great excuse to throw an impromptu dinner party. If you know anything about me (besides my undying love of cheese) it’s that I love a good dinner party. Realistically, I even love a sorta okay dinner party. Basically if there is food involved, I’m there and happy as a clam….

Homemade Mozzarella Cheese

As you may know, cheese is my favorite food group. Yes, I said food group. In my book it deserves its own group separate from dairy in which it can shine to all of its cheesy goodness potential. …

Spanish Flan

The first time I attempted to make flan was Thanksgiving of this past year and I still have the scars to prove it. Hint for those who, like me, weren’t aware: melted sugar is HOT. The second time around I tried a different tactic with decidedly better results and significantly fewer sugar burns. It also tasted great, so that was a big plus.

Mango Flower Custard Tart

I may not be the biggest sweets person on the planet, but man do I like making pretty desserts. It’s so fun to just zone out and only focus on getting the lattice on your blackberry pie juuuust right or getting the perfect char on your crème brûlée….

Mulberry Scones

Spring is here! For those of you out there who, like me, associate the change in weather with what fruits and veggies are in season, spring is a wonderful time for all things green and delicate.

Summer Squash + Goat Cheese Frittata

I have decided that Memorial Day Weekend is the perfect excuse to host a brunch. I had about a 6 hour warning that my friend wanted me to host brunch at my place for 4 people for her 25th birthday so I wanted to make something that would be delicious but wouldn’t take up my entire morning….

Spaghetti + Eggplant “Meat”balls

What can I say, I’ve finally jumped on the Meatless Mondays train.  After doing a bit of research about it last night, I found that there are a large number of countries around the globe that support Meatless Mondays in the name of sustainability and an even bigger number of restaurants that subscribe to the movement. Not only does it help promote environmental sustainability and your general health, it also requires you to be creative when putting together your shopping list every week, which is always something that I love doing.

Quinoa Protein Bars [GF]

I’ve never been a huge fan of protein bars, mostly because I’m not a big lover of chocolate (weird for a female human being, I know). I figured if I couldn’t find a protein bar that I liked, I might as well try to make one. I had a bunch of random things in my pantry as per usual, so I decided to wing it. Thankfully, these turned out delicious!
